For February 2009....
TACO SOUP
Hot, hearty, and very tasty!
1/4 c. chopped onion 1/4 c. water or broth 4 15.5-oz. cans hot chili beans, undrained (or prepare from scratch) 1/2 c. whole kernel corn 1 15-oz. can tomato sauce 1 14.5-oz. can diced tomatoes, undrained 1 4.5-oz. can chopped green chilis 1 envelope taco seasoning mix 1 envelope Ranch-style dressing mix 1 1/2 c. water * Shredded cheese, rice cheese, or other alternative, optional * Fat free sour cream or alternative, optional * Crushed taco chips, optional
Sauté onion in water or broth in large soup pot or slow cooker until softened. Add beans, corn, tomato sauce, tomatoes, chilis, taco and Ranch seasonings, and water. Bring to boil. Reduce heat and simmer, uncovered, 15 minutes, stirring occasionally. May cook in slow cooker on low for several hours.
Spoon soup into bowls; top with cheese, sour cream, and taco chips, if desired.
