My family and I became vegetarians recently. We had already decided that indian cuisine was not only very tasty by also very healthy. I ran across this book purely by accident and have been giving it and recommending it to friends ever since.
Synopsis: Beattie introduces us to the sweet, sour, salty and spicy flavors of Thai cooking. Thai food has never been so simple! Using ingredients such as hot chilies, cooling coconut, zesty lime, piquant ginger, and fragrant lemongrass, Beattie offers tasty Thai dishes that are simple enough for the everyday chef and all ready to serve in 30 minutes or less.
From the author: Authentic Mexican cooking is a surprise to most people, who may have a very limited, preconceived notion about the food from Mexican fast food chains. Mexican food is deeply rooted in ancient tradition and European influences and varies from one region of the country to another. It is a naturally healthy cuisine, based on the protein-rich combination of beans and corn. Vegetables, fruits, grains, nuts, seeds, herbs and spices are abundant and rich in variety, and are the essence of these healthful recipes. Traditional recipes using meat have been adapted to a vegetarian diet. Lard has been substituted by vegetable oil. Fat content for each recipe has been reduced. Nutritional analysis is given for each portion. The degree of difficulty ranges from very easy recipes (children can make many of them) to challenging, but each contains detailed, step-by-step instructions.

I have yet to find a recipe that I was not completely pleased with. I feel the personal touch she gives to each dish adds greatly to the over all appeal.

Bishop has made me one very happy vegetarian who always comes back to his book to discover some new, exciting flavors. I can recommend this cookbook without any reservations to anyone. Note: rumor has it that this cookbook is not especially low-fat.
Customer Comment (rating=*****): Flavors of Korea is a gem of a cookbook! As a vegetarian going through a bit of "menu bordom", I wanted to try Korean food to spice up my palette. I could not have made a better choice and for such a great price. Everything is explained in the book from buying Korean spices, to wonderful menus. The author has done a good job of keeping things simple for those of us who might be a bit intimidated.

The recipes are usually easy and don't take long, and are definitely well worth the preparation. The dishes are not "expensive" to make, nor do they require hard-to-find ingredients. The pictures are mouth-watering as well... I love this book!

I never thought it possible to get heathy food that is so good. These are marvelous recipes. Each one different and delicious.

I hate to cook, but I love Indian food & I love this book... the recipes are short, easy to read, & easy to understand. I like the "Suggested Accompaniments" that come with each recipe, & the dishes really do taste good. The missing fat was not replaced with a lot of sugar ... another plus!

On the comtemporary side I found, tex mex cholent, buffalo wings, chili, burritos, chocolate chip cookies....there is something for everyone in this book.
Customer Comment: rating=9: Simple, quick, peasant style indian recipes. This little gem is my favorite indian cookbook. They are the kind of recipes you can make quickly and easily at home. This food has the hearty "peasant food" feel to it. Haute cuisine NOT. If you buy it you'll end up wanting your own indian spice box (I now own two). You're also apt to end up with a taste for some spices you can't easily get in your home town like curry leaves and green mango powder. I stock up whenever I'm in Berkeley or Vancouver B.C. Many of the recipes can be made with ingredients you'll find in Muskogee. As for the rest, get the ingredients when you can find them. These recipes are not overly westernized and you'll appreciate it when you sit down with a little eggplant curry and dal or a cool raita.

I've prepared several dishes from this book and every one is a winner. Simonds' recipes use easy to find ingredients; they are quick to prepare and, best of all, they are delicious. The flavors are crisp and clean.
Synopsis: Americans love Mexican food, but they know very little about the cooking of any countries farther south than Mexico. Raichlen sets out to rectify that gap, and he also determines to make these Central and South American foods healthier by reducing the amount of fat they customarily contain. He accomplishes some of his savings in fat calories by changing cooking methods.

What a great book! I've tried about a dozen recipies so far and they are all superb. The Jerk Chicken Recipe on page 67 is so wonderful we have made it several times. My lips felt like they were blown up to 50 PSI but I couldn't stop eating it. The Island Roasted Chicken with Thyme Mustard Sauce is another unforgettable meal. Ground Nut Stew, Black Bean Soup, and Papaya,Mint,Coconut Soup are also memorable. This is a "Must Have" book.
