Vegan Caesar Vinaigrette

4-8cloves garlic, pressed
2tsp. red wine vinegar
4tsp. balsamic vinegar
2T. fresh lemon juice
1tsp. dry mustard
1/4tsp. cayenne sauce
2tsp. tamari/soy sauce
1/2c. hot water
2chicken-flavor broth
1/4veggie broth powder
1/8tsp. salt seasoning
4twists fresh pepper
1/4c. nutritional yeast

 

Mix, bottle and keep refrigerated. This is a 'toss with the salad' rather than a 'pour on top of the salad' sort of dressing. It's very assertive, and calls for strong, flavourful salad greens; mesclun mix, arugula, endive, radicchio, etc. mixed with your milder lettuces works like a charm. Wonderful with some grated carrot and thickly-diced tomato.
