DRESSING FOR PASTA SALADS

All measurements are approximate. I said I eat healthy, not accurately!

1 lb. soft tofu
2 T. lemon juice
2 cloves crushed garlic
1 T. chopped parsley
1/4 c. grated parmesan
Soy milk to make it a consistency that you like.

Blend in food processor or blender. I love to put it over fusilla pasta with cut up broccoli, red peppers and chopped carrots. Very pretty to look at, to boot! I very lightly steam the broccoli because I don't like the taste of raw broccoli. To each his or her own!
