| 1 | 20-oz bag frozen chopped okra |
| 1 | green or red pepper, diced |
| 1 | onion, diced |
| 1 | 7-oz can diced green chiles |
| 1 | 28-oz can tomatoes |
| 3 | small potatoes, diced |
| 2 | pints water (use juice from tomatoes as part) |
Soak the okra in water for 1 hour; drain. Combine all ingredients and bring to a boil. Turn down the heat, clamp on the lid, and cook for 30 minutes or longer until sauce is thick. Serves 6 - 8.
